Whole Beef Tenderloin (untrimmed): weigh 6-8lbs but 2.5-3lbs is lost in trimming, serving suggestion 6-8oz per person. Serves 8-13 people
Center Cut Beef Tenderloin: 6-8oz per person, 3.5 lbs. is largest size available and serves 6-8 people
Beef Top Sirloin Roast: 3-7lb range, we recommend 3/4lb per person to allow for shrinkage
Boneless Pork Roasts: 3/4lb per person to allow for shrinkage
